Teriyaki Cedar Plank Salmon with Citrus Salad and Sesame Ginger Dressing

Ingredients for the Teriyaki Salmon
- 2 T soy sauce or tamari
- 2 T honey
- 2 T lemon juice
- 1 t sesame oil
- 24 oz. fresh wild salmon
- Fresh lemon and lime
- Sea salt
- Red pepper flakes
Ingredients for the Sesame Ginger Dressing
- 2 T sesame oil
- 2 T ginger juice
- 2 T honey
- 2 T olive oil (or flax, walnut, almond oil)
- Juice and zest of 1 lime
- Pinch of salt and red chili flakes
Ingredients for the Salad
- 1 grapefruit, peeled and chopped
- 2 small oranges, peeled and chopped
- 2 Persian cucumbers, chopped
- 1 cup snap peas, chopped
- 1 head of watercress, roots trimmed
- 2 T sesame seeds
Directions:
- Prepare the cedar plank according to directions - about 2 hours soaked in water.
- In a small sauce pan add the soy sauce, honey, lemon juice, and sesame oil. Bring to a light simmer, mix well, and remove from the heat.
- Preheat the oven to 325 F and pat the salmon and cedar plank dry with paper towels. Place the salmon on the cedar plank and brush generously with Teriyaki Sauce. Cut the fish into equal size portions. Place thinly sliced lemons and limes on the salmon. Garnish with sea salt and chili flakes.
- Bake for 20-25 minutes or until desired doneness.
- Assemble the salad ingredients and toss in dressing. Serve next to salmon.
