Excellent when properly prepared

Monk fish needs a little extra care in preparation because of the extra membrane on most cuts, but once that is removed the serving options are many. Sauteed in a little butter it really does seem like lobster. Poached with fresh vegetables in a light broth it is terrific. Best of all it is a real bargain.
