Hood Canal Oysters in the shell

These oysters are much larger and tastier than those normally found here in east coast. Size varies but even the smaller ones are larger. The larger ones are alittle harder to shuck but those I found broiling in oven from above (vs grilling) for minute or so makes it easier to open as well as minimize losing its juice, as well as enjoying a different taste then eating raw.

The Hood Canal Oyster are much larger than the standard oyster bar oysters, in fact when shucking these oysters, I can find 2-3 additional oysters attached to one very large one. Since these are larger, using a double cracker maybe needed when eating raw. The larger shells are great for oysters Rockefeller or Churchill. I know these larger variety are best for cooking/frying; they do have a wonderful flavor raw. I do recommend rinsing well in a large bowl clear water to help remove the bits/chunks of shell from the meat then hand picking the meat from the bowl; your teeth will thank you later.
