Salt Baked Trout

Ingredients
- 2 Trout (whole)
- 1 Lemon sliced
- 2 sprigs Thyme
- season with salt and pepper
- 6 C salt
- ¼ C water
Directions
- Preheat oven to 425 degrees.
- Add lemon slices and thyme to inner cavity.
- In mixing bowl combine salt and water until the salt feels like snow. You don’t want it too moist.
- Place a layer of salt on a baking sheet, place fish on top. Cover the fish with remaining salt. Make sure it is packed tightly.
- Bake in oven for 18 minutes at 425 degrees. Once cooked, remove from oven, crack salt off and carefuly scrape it off the fish. Remove the skin and serve.
