Salmon Rillettes

Ingredients

  • ½ lb fresh King Salmon
  • ½ lb Alderwood Smoked Salmon
  • ¼ C sour cream
  • 1 T chives minced
  • 1 T shallot minced
  • 1 T lemon juice
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt

Directions

  1. Heat oven to 325 degrees. 
  2. Place fresh Salmon on a baking sheet and bake until cooked through – around 15 minutes. Remove from oven and let cool.
  3. Once cool, remove from skin.
  4. Mix cooled, baked salmon with all other ingredients in a bowl with spices until fully incorporated. Add more sour cream if needed for creamy texture.
  5. Place in a jar and keep in the fridge. Good for 2 days in the fridge.
