Salmon Rillettes

Ingredients
- ½ lb fresh King Salmon
- ½ lb Alderwood Smoked Salmon
- ¼ C sour cream
- 1 T chives minced
- 1 T shallot minced
- 1 T lemon juice
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp salt
Directions
- Heat oven to 325 degrees.
- Place fresh Salmon on a baking sheet and bake until cooked through – around 15 minutes. Remove from oven and let cool.
- Once cool, remove from skin.
- Mix cooled, baked salmon with all other ingredients in a bowl with spices until fully incorporated. Add more sour cream if needed for creamy texture.
- Place in a jar and keep in the fridge. Good for 2 days in the fridge.
