Smoked Salmon Cakes

2 lbs. smoked salmon
2 cups breadcrumbs - panko
1 cup Chipotle Aioli
3 celery stalks diced
2 onions diced
2 eggs
1 Tbsp Old Bay Seasoning
juice from 1 lemon
Chipotle Aioli recipe
1 C Mayonnaise
2 Tbsp ground chipotle pepper
1 Tbsp BBQ Seasoning
1 Tbsp Chopped Garlic

Chipotle Aioli
Place all items together and mix together. Allowing it to set over night will allow it to combine the flavors better.
First, on medium heat with a Tablespoon of butter cook your celery and onions till they are tender then remove and let cool.
Then combine everything together but the smoked salmon. After the mix is all combined, dice up salmon in a large dice then lightly fold in the salmon. 
Then form into patties, smaller size patties will cook better than larger patties. 
On Medium heat place in a pan with a tablespoon of butter and brown then place into the oven set at 350 F till the internal temperature is 145 degrees F.
The chipotle Aioli supports the smoky flavor of the smoked salmon. You can make extra Aioli and use it as a condiment with the Smoked Salmon cake. I hope you enjoy this recipe!
